Raw and Cooked Will Self visits a themed Mongolian restaurant, complete with yurt.
The gig at this particular themed restaurant is participation. In the middle of the gaff sat an enormous, octagonal griddle, ministered to by one of the natural born grillers. This was obviously meant to echo the blurb on the menu, which informed us that: 'Centuries ago in the Province of Mongolia the Mighty Khan’s hunting parties and warriors prepared slivers of meat cut with the sword edge, together with a special combination of vegetables, incense, spices and sauces and grill their meals on upturned shields…' There were even a few shields dangling from the ceiling to thrust the point home.

I rather enjoyed the barbecue. The vassals that attended to us were solicitous – and the bill was only £35, which for a man and horse is not unbearable.

Paunch Lines Follow our hero on an eye-popping and trouser-popping culinary journey.

I got more than I bargained for. Based on the way the Kubla Khan's warriors would share meals grilled on their upturned shields, tray upon tray of raw meat, veg, herbs and spices were cooked before our eyes. We were challenged to fill our bowls as many times as we could. This was creative cooking without the tedium of doing it yourself.

Luckily, easy-to-follow recipies were displayed on the wall. It went down extremely well. With the recommended recipe showing me just what choosing the right spices could achieve, my second original dish was a vast improvement, and I felt a flush of pride. My palate might not have travelled far beyond China, but I had taken my first tenative steps toward real cooking.
